Pho, North vs South: The Bowl Vietnam Argues About Most Lovingly

A steaming bowl of Vietnamese pho noodle soup with beef and fresh herbs

Every food lover in Southeast Asia eventually lands in this friendly argument — and this guide from our own Food From Northern Laos blog lays it out beautifully. Pho looks simple: flat rice noodles, clear broth, slices of beef. Getting it right is all about balance.

The dish began in northern Vietnam in the early 20th century, around Hanoi and Nam Dinh, where vendors carried broth and noodles in baskets on a shoulder pole and served workers at dawn. When families moved south in the 1950s, pho went with them — and changed along the way.

Hanoi style is austere and precise: a clear, delicate broth with very little sweetness, wide noodles, beef and green onion, and almost nothing added at the table beyond garlic vinegar, chilli sauce and lime. No sprouts, no herb plate, no hoisin — the broth does the talking. Saigon style is generous by contrast: a slightly sweeter, more richly spiced broth, thinner noodles, and a whole garden on the side — Thai basil, sawtooth herb, bean sprouts, lime, fresh chillies and hoisin — with rare beef, brisket, tendon, tripe and beef balls often sharing the bowl.

What both styles share is the work underneath: beef bones simmered gently and skimmed until the broth shines, charred onion and ginger, toasted star anise, cinnamon, cloves and cardamom, noodles cooked just until supple, and paper-thin beef cooked by the hot broth ladled over it. At the table, pho is breakfast first — taste the broth plain before you add anything, then adjust with lime, chilli and herbs torn in by hand. Nobody rushes a bowl of pho: the vendor serves it in seconds, but the broth took all night. The source post finishes with a full home recipe for four, if you want to try that overnight magic yourself.
