Not every great dish arrives with a fanfare. This new post from Food From Northern Laos shines a light on soop pak, the humble plate of blanched vegetables that northern Lao families put in the middle of the table — and that everyone keeps going back to.
Think of it as a warm salad. Whatever greens and vegetables are fresh that morning — water spinach, long beans, cabbage, bean sprouts, small eggplants — get a brief blanch, just long enough to brighten and soften them, then are chopped and tossed while still warm. The signature move is toasted sesame: pounded lightly and used generously, it coats the vegetables and gives the dish its nutty, savoury depth. A rough paste of galangal, garlic and chilli, a splash of padaek or fish sauce, and a finish of coriander, spring onion and mint do the rest. Served at room temperature with sticky rice and a hot jeow for dipping, it is fresh, clean and satisfying — the post includes a simple home version you can adapt to whatever your own market has that day.
